Good Eats

Week of April 24th Meals:  This was not the most interesting week for food.  I did not have a lot of time to cook this weekend due to the fact that it was my husbands birthday and Easter.

Garlic and Herb Meatballs and Spaghetti
  • I used 1 lb of ground beef and added garlic, italian herbs, black pepper, a little bit of steak seasoning, and merlot sauce and mixed them all together.
  • Rolled the meat into balls and baked in the oven for 20 mins.
  • These will be served with Smart Option Spaghetti noodles and homemade tomato sauce.
Pineapple Chipolte Pulled Pork Homemade Mashed Potatoes, and Fresh Steamed Cauliflower
  • I used a cut of pork from our frozen pig and put it in the crock pot with about 1 cup of water and half a bottle of pineapple chipolte sauce and cooked on low for about 8 hrs.
  • I paired this with homemade mashed potatoes and Steamed Fresh Cauliflower.
Sundried Tomato and Basil Shrimp and Broccoli Stirfry over Brown Rice
  • 1 lb of Shrimp sauteed with a little EVOO and Sundried Tomato Dip mix from Tastefully Simple and a pinch of Basil.
  • 1 head of Fresh broccoli. Saute and add shrimp.
  • 1 bag of instant brown rice. 
  • pour shrimp and broccoli over the rice.  dinner is served!
Marinated Sirloin Steak, Homemade Mashed Potatoes, Peas
  • I had a very large sirloin steak that I marinated in Worchestershire sauce, steak seasoning and garlic overnight.
  • I broiled the stead for about 4 mins on each side.
  • Served with homemade mashed potatoes and peas.
BBQ Chicken
  • I marinated Chicken in All purpose sauce, garlic, and black pepper.
  • Put it into the oven and baked for about 35 mins.
  • cut the chicken up and layered it over my salads for lunch.

Week of April 17th Meals:
London broil with onions and red peppers, spaghetti squash casserole and baked potatoes
  •  Marainated the beef in Tastefully Simple Merlot sauce, onions, peppers, fresh squeezed garlic and pepper in a bag in the fridge for about 4 hrs.
  •  Broiled the meat for about 4 mins per side (time may vary depending on how you like your meat cooked)  I like mine Med-Rare so 4 on each side was good.
  • Spaghetti squash was just a spaghetti squash that I halved and placed into a baking dish with some water and baked for 45 mins then scraped the insides out making the "spaghetti".  i added zucchin, mushrooms, tomatoes and some tomatoe sauce.
  • Baked potato with fresh chives

Stuffed Red Peppers
  • I washed and cut the tops off of 2 red peppers and cut small holes in the bottoms of the peppers to allow for drainage from cooking.
  • I used about 1/2 lb of ground beef and mixed in chopped onions, chopped the tops of the red peppers, black pepper, garlic, tomoatoes and mushrooms. 
  • Stuff the peppers with the meat mixture and cook in the oven covered for about 45 mins at 375.
  • I will most likely make brown rice to pair with this meal.

PorkChops Fresh Green Beans and Mashed Potatoes
  • 4 pork chops
  • rubbed them with a hickory maple rub and let them sit in the fridge for about 4 hrs and then baked them in the oven for about 40 mins at 375.
  • I washed and snapped a pack of fresh green beans.
  • Sprayed a pan with olive oil and sauteed the green beans with some pepper, and steak seasoning.
  • Mashed potatoes:  peeled and boiled 5 potatoes.
  • drain all but a few table spons of water and mash.
  • I added a few sprinkles of parmasean cheese and bacos bacon bits.
Shrimp Stir Fry
  • Peel and cook 1 lb of shrimp using Tastefully Simple Shanghi Stir Fry sauce and remove from the pan.
  • I cut zucchini, broccoli, cauliflower, turnips, carrots, mushrooms, peppers, and onions and stir fry in a pan with more of the shanghi sauce until the veggies are slightly cooked.
  • Add the shrimp and continue to saute for about 10 mins.
  • This is being paired with Quinoa prepared as directed by the packaging.
Black Bean Soup
  • Add 2 cans of Garbonzo beans to a food processor on high. 
  • Add 1/2 jar or so of salsa and continue to puree in the food processor.  I like med flavored.
  • Pour into a bowl.
  • Add garlic, onions, peppers hot sauce, 2 cans of black beans and and more salsa.  mix and store for eating.
